  • PROFESSIONAL NAKIRI VEGETABLE KNIFE: This Japanese Nakiri knife is perfect for everyday vegetable prep. Unlike traditional single-bevel Usuba knives, the Nakiri features a double-bevel edge, making it easy to use for both home cooks and pros. Its rectangular shape and flat blade are optimized for chopping leafy greens and root vegetables. Handcrafted by MASAMOTO SOHONTEN, a trusted maker since 1866, this knife delivers exceptional performance with timeless craftsmanship.
  • RAZOR-SHARP BLUE STEEL #2 BLADE: The blade is forged from premium Japanese carbon steel (Aogami Blue Steel No.2), known for its razor-sharp edge, excellent toughness, and long-lasting sharpness. It strikes a perfect balance of hardness and durability, providing a smooth and satisfying cut every time. Note: As a carbon steel knife, it is more prone to rust than stainless steel and requires proper care after each use.
  • KUROUCHI FINISH: This knife features a traditional Kuro-Uchi (black-forged) finish, where the darkened surface from the heat-treatment process is left intact. Not only does it give the blade a rugged, rustic appearance, but it also helps to resist rust slightly better. It’s a classic element of Japanese craftsmanship, offering both function and aesthetic character.
  • JAPANESE WA HANDLE: The lightweight wooden handle is crafted in the traditional Japanese Wa style, with a comfortable oval shape that fits naturally in your hand. The ferrule is made from durable water buffalo horn, adding strength and elegance to the overall design. This handle ensures a secure grip and precise control during use.
  • PRODUCT INFORMATION: Made in Japan / Blade length: 6.5 inches (165 mm) / Blade material: Masamoto's Ao-ko (AOGAMI Blue Steel #2) / Blade finish: Kurouchi / Handle material: Magnolia wood, water buffalo horn / Hardness Rockwell C scale (HRC): 62-63 / Note: Due to subtle differences in blade shape, sayas of the same size from other Masamoto series are not compatible with the KA Series.
